A hot, sweet, tropical spice with a wonderful pungent, citrus flavour that is warming to taste. Ginger is a dried, knobby-shaped root of the perennial herb Zingiber officinale. Externally it is a pale yellow colour but internally it is buff coloured.

In uncooked dishes such as sauces, marinades, and dressings, the spiced liquid should be left standing for several hours to develop flavour. Ground Ginger is commonly found in gingerbread, pies, cookies, puddings, chutneys, sauces and in Oriental meat dishes.
